Naturally sweet carrots are enhanced with almonds, amaretto, and a hint of cinnamon. If you do not have amaretto liqueur or can't use it, simply substitute almond extract as directed in the recipe. This is an elegant yet simple and fast side dish.

  • 1/4 cup slivered almonds
  • 1 pound fresh carrots (trimmed and peeled)
  • 1/2 stick (4 tablespoons) butter
  • 1/4 cup amaretto liqueur (can substitute 1 teaspoon almond extract)
  • 1/8 teaspoon ground cinnamon
  • salt and white pepper to taste

Steps to Make It

  1. Lightly toast slivered almonds in a dry skillet until they start to become lightly brown and smell fragrant. Set aside.

  2. Slice the carrots into 1/8-inch-thick coin shapes.

  3. Place carrots in a heavy saucepan with the butter, and gently simmer about 3 minutes, stirring occasionally.

  4. Add the amaretto, cinnamon, pepper.

  5. Continue to simmer until carrots are just tender but not overcooked. Stir in toasted almonds and serve.
