This trimmed brisket recipe starts out in a dutch oven then finishes up on the grill to give it texture and a crusty surface. Perfect for any time of the year and great option for Sunday dinner.


  • 1 brisket of beef, trimmed (2-1/2 pounds/1.1 kg)
  • 3 1/2 cup830 mL apple cider
  • 1/2 cup/120 mL white wine
  • 1/3 cup/80 mL honey
  • 1/4 cup/60 mL soy sauce
  • 1/4 cup/60 mL molasses
  • 1/4 cup/60 mL cider vinegar
  • 2 tablespoon/30 mL yellow mustard
  • 1 tablespoon/15 mL minced garlic
  • 1 tablespoon/15 mL minced fresh ginger root
  • 1 teaspoon/5 mL salt
  • 1/2 teaspoon/2.5 black pepper

Steps to Make It

  1. Gather the ingredients.
  2. Preheat oven for 375 degrees F/190 degrees C.
  3. Mix Wine, vinegar, cider, honey, mustard, soy sauce, molasses, garlic, salt, pepper, ginger root in Dutch oven or heavy roasting pan. Add the brisket. Cover and place into the oven. Cook for 50 minutes.
  4. Remove brisket from cooking liquid, tent with aluminum foil and set aside. Transfer liquid to a pan and cook over medium to medium low heat until reduced to a glaze and is fairly thick.This should take about 10-15 minutes. Stir often and watch for burning. Reduce heat to low if needed.
  5. I recommend using a charcoal grill. Prepare grill for an indirect cook. Add either hickory, apple, or mesquite. Place brisket onto grill grates and and cook for about an hour. Turn the meat and brush with reduced glaze every 20 minutes. Be sure to keep the coals going!
  6. If you only have access to a gas grill, then preheat for medium heat and prepare a smoke packet (foil and wood chips). Make sure to pierce the packet a few times before adding to the grill. Cook as direction.
  1. Once cooked through, and tender, remove the brisket from the grill and place onto a cutting board. Let meat rest for a bout 5 minutes before carving. Serve with your favorite sides or shred brisket and serve in sandwiches.
