Apple loves writing about food because it connects people, identifies culture, and opens a conversation. Before moving to New York in 2020, she lived in Shanghai for 5 years, followed by 10 years in Hong Kong. Her first job in Shanghai as a food writer gave her the opportunity to meet and interview culinary personalities, including three-star Michelin chef Alain Passard and British author and cook Fuchsia Dunlop, as well as review restaurants and develop and test recipes. In Hong Kong, having worked for The Peak, a luxury magazine owned by the South China Morning Post, she had the opportunity to write and edit features stories.
