This simple salad has the surprise creaminess of rich avocado pieces and the fresh twist of herbs. Use the best balsamic vinegar you can find; it really does influence the final result. Serve the salad with Lobster Bisque for an impressive lunch or dinner.

What You'll Need

  • 1 cup cherry tomatoes (halved)
  • 1 tablespoon chives (fresh, chopped)
  • 1 1/3 cup avocado (chopped)
  • 3 cups romaine hearts (chopped)
  • 2 teaspoons parsley (chopped)
  • 1 teaspoon dill weed (chopped)
  • Drizzle balsamic vinegar (to taste)
  • Drizzle extra virgin olive oil (to taste)
