Ingredients

  • 6 large beef hot dogs

  • 6 strips bacon

  • 6 hot dog buns

For the Cheese Sauce:

  • 2 ounces (4 tablespoons) unsalted butter

  • 2 tablespoons flour

  • 1 1/4 cups milk

  • 1 1/2 to 2 cups shredded sharp cheddar cheese

  • 3 tablespoons diced pickled jalapeños

  • 1 teaspoon mustard powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon salt

  • 3 to 4 dashes hot sauce

  1. Gather the ingredients.

  2. In a saucepan, melt butter over medium heat.

  3. Add flour, stirring well to form a roux. Cook for about 1 to 2 minutes.

  4. Add milk 1/2 cup at a time while whisking mixture together.

  5. Add cheese and all ingredients except, jalapeños. Whisk until thick and melted through. This process should take about 8 to 10 minutes total.

  6. Once cheese sauce has reached a good thick consistency, add jalapeños and stir through. Keep cheese sauce on a warm setting until the hot dogs are cooked.

  7. Preheat grill for medium-high heat. Wrap each hot dog with a strip of bacon. You might need to cut bacon to fit.

  8. Place hot dogs onto the grill and cook for 8 minutes, occasionally turning until the hot dog is cooked and bacon is good and crisp.

  9. Remove from heat, place into a warmed hot dog or deli bun, top with cheese sauce and serve.
