A great dog for game night or any old cookout. This recipe isn't for the faint of heart and calls for a homemade cheese sauce, which you can adjust to your liking.

6 large beef hot dogs
6 strips bacon
6 hot dog buns
For the Cheese Sauce:
2 ounces (4 tablespoons) unsalted butter
2 tablespoons flour
1 1/4 cups milk
1 1/2 to 2 cups shredded sharp cheddar cheese
3 tablespoons diced pickled jalapeños
1 teaspoon mustard powder
1/2 teaspoon onion powder
1/2 teaspoon salt
3 to 4 dashes hot sauce
Gather the ingredients.
In a saucepan, melt butter over medium heat.
Add flour, stirring well to form a roux. Cook for about 1 to 2 minutes.
Add milk 1/2 cup at a time while whisking mixture together.
Add cheese and all ingredients except, jalapeños. Whisk until thick and melted through. This process should take about 8 to 10 minutes total.
Once cheese sauce has reached a good thick consistency, add jalapeños and stir through. Keep cheese sauce on a warm setting until the hot dogs are cooked.
Preheat grill for medium-high heat. Wrap each hot dog with a strip of bacon. You might need to cut bacon to fit.
Place hot dogs onto the grill and cook for 8 minutes, occasionally turning until the hot dog is cooked and bacon is good and crisp.
Remove from heat, place into a warmed hot dog or deli bun, top with cheese sauce and serve.
