Grilling lamb chops is a way of creating little morsels of love. Flavorful and tender, if these are seasoned and grilled right, they turn out fantastic. The marinade for these lamb rib chops combines balsamic vinegar with Dijon mustard and a good dose of herbs to create a flavor profile that enhances the lamb, but still allows that natural flavor to shine through. 


  • 12 lamb rib chops

  • 1/2 cup olive oil

  • 1/4 cup balsamic vinegar

  • 2 cloves garlic, minced

  • 1 tablespoon fresh rosemary, chopped

  • 1 tablespoon honey

  • 2 teaspoons Dijon mustard

  • 1 teaspoon dried oregano

Steps to Make It

  1. Gather the ingredients.

  2. Place the lamb chops in a shallow baking dish or resealable plastic bag.

  3. Combine olive oil, balsamic vinegar, garlic, rosemary, honey, mustard, oregano, salt, and pepper. Mix well and pour over lamb chops. Gently toss to coat.

  4. Cover or seal bag and refrigerate for 1 to 2 hours.

  5. Preheat the grill to medium-high heat.

  6. Remove the chops and place onto grill grates. Discard marinade.

  7. Grill the lamb chops for 4 to 5 minutes per side, until cooked to desired doneness.
