These simple fried chicken strips are delicious with a dip and fries. Enjoy them with ranch dressing, spicy chili mayonnaise, or a Louisiana remoulade sauce. The recipe is made with chicken breasts, but boneless thighs or chicken tenders may be used.
The coating mix is a simple combination of flour and Cajun seasoning. Or use a store-bought deep-fry coating mix.
- 3 pounds chicken (boneless chicken breasts or thighs)
- 1 cup hot pepper sauce (e.g., Texas Pete, Trappey's, Frank's)
- For the Coating:
- 1 1/2 cups all-purpose flour
- 1 1/2 tablespoons Cajun seasoning
Slice the chicken into finger-sized pieces and put the pieces in a plastic zip-lock bag. Pour the hot sauce into the bag and turn to coat the chicken thoroughly.
Seal the bag and place it in the refrigerator; marinate for one to two hours. Turn the bag occasionally to keep the chicken well coated.
Heat the oil in a deep, heavy saucepan to 360 F.
Roll the chicken pieces in the coating mix and deep fry until golden brown.
