Basic Fruit Syrup with Variations

You could just buy syrup for your pancakes or you could make your own. If only takes a few minutes, and the results are well worth it.


  • 1/3 cup water
  • 1 cup fruit
  • 3/4 cup sugar

Steps to Make It

In a medium pot, add the water and the sugar. Use a wire whip to combine the sugar and the water until you can no longer see the sugar. Add the fruit to the pot. Bring the pot to a boil. Allow to simmer until the mixture thickens. With a potato masher or the back of a spoon, smash the fruit near the end of cooking. Cook for a 2 more minutes. Remove the pot from the heat.

If thin syrup is desired, put the mixture through a strainer. If thick syrup is preferred, leave the fruit as is or process the syrup in a food processor, Discard the fruit pulp.  

This syrup can be served room temperature or warm from the stove top. Store any leftover syrup in the refrigerator.

Fruit Syrup Variations:

Strawberry Syrup
Wash the strawberries. Hull and quarter berries before adding them to the sugar water.

Blueberry Syrup
Wash the blueberries. The berries can be put into the pot without cutting them. Blueberries do have a tendency of bursting while cooking.

Blueberry Orange Syrup
Instead of the water, use orange juice. An orange juice with lots of pulp is preferred. Make the syrup as it’s written above.

Mango Syrup
Wash, peel and pit the mangoes before cutting them into cubes. Smash them while they syrup is simmering.

Raspberry or Blackberry Syrup
Add the whole berries to the sugar water. When the syrup has finished cooking, remove the berries. Push the berries through a fine strainer to remove any seeds. Add the juice to the rest of the sauce.

Triple Coconut Syrup
Use 1/3 cup coconut water, 1 cup of shredded coconut and 1/2 cup cream of coconut like Coco Loco.
