This homemade meatloaf has a down-home feel, but it is far from traditional and sure to impress dinner party guests. The recipe combines seasoned ground beef and ground chicken or turkey, which is then layered, and rolled to reveal beautiful circular layers in each slice. To top things off, the rolled ground beef and turkey meatloaf is then wrapped in puff pastry and given an egg wash before it's baked to a perfect golden brown. You may never go back to your classic meatloaf recipe again!
Ingredients

1 (8 x 10-inch) sheet puff pastry, thawed

1 pound ground beef

1 pound ground chicken, or turkey

1 onion, finely chopped

2 eggs
-
2 tablespoons mustard

4 cloves garlic, minced

Salt, to taste

Freshly ground pepper, to taste, plus other spices as desired

2 cups matzo meal, or bread crumbs

1 can mushrooms, sliced or fresh sliced mushrooms

1 egg, beaten; for brushing puff pastry
Steps to Make It

Gather the ingredients.

Mix ground beef with half of chopped garlic, half of chopped onion, 1 cup of matzo meal or bread crumbs, 1 egg, salt, and pepper in large mixing bowl.

Grease a sheet of aluminum foil. Spread ground beef on foil to form a flat rectangle.

In a separate bowl, mix ground chicken or turkey with remaining garlic, onion, matzo meal or bread crumbs, 1 egg, salt, pepper, and mustard. Cover ground beef rectangle with chicken mixture.

Place line of mushrooms across the width of meat rectangle and roll up jelly-roll fashion, leaving foil behind. Set aside.

Place thawed puff pastry on a flat surface, place meat roll on puff pastry; roll and cover meatloaf mixture in pastry. Trim and seal edges with water. Brush with beaten egg.

Place meatloaf on a foil-lined baking sheet and bake in at 350 degrees Fahrenheit for half an hour (30 minutes), covered with foil.

After 30 minutes, uncover and bake for an additional half-hour or until pastry is golden brown.

Serve hot or room temperature. Enjoy!
Tips
- While this meatloaf is delicious as is, you can add any herbs or spices that appeal to you. We love using dried thyme or rosemary.
- You can use any mustard you have on hand, but we love using a Dijon-style mustard or even a basic country mustard. You can purchase either at the grocery store, but if you're feeling zealous, you can try these homemade recipes:
