The Bellini is a classic wine cocktail that enjoys an impressive following. Originating in Venice, this cocktail is based on the bubbles of the region's most famous sparkling wine, prosecco. Light, refreshing and simple to set up, this is by far Italy's most popular wine cocktail. It's perfect for dining al fresco for brunch on warm spring and summer days.
It's simple enough to prepare that you can easily make your own peach puree if you like without adding much to your prep time. Simply puree fresh or frozen peaches (skins removed) in your blender until smooth. White peaches are traditionally used, but yellow peaches will work in a pinch.
- 3 oz. Prosecco Sparkling Wine
- 1 oz. *Peach Puree or Peach Schnapps
- Pour the peach puree or peach schnapps into a champagne flute and slowly add the prosecco, being careful to not overfill the flute (the bubbles can quickly sneak up on you!).
- Serve and enjoy immediately.
