Blue cheese sauce is a rich and flavorful topping for pasta, meat or even vegetables. A little bit goes a long way, so you don't need to eat a huge portion (unless you want to, of course!). Using a high-quality blue cheese is important, since most blue cheese sauces don't have many ingredients and the flavor of the blue cheese really comes through.
If you don't already have a favorite type of blue cheese, a few to try in blue cheese sauce are: Gorgonzola, Cashel Blue, Buttermilk Blue and Maytag Blue.

It doesn't get easier than this - simply combine butter, blue cheese and parsley with pasta and you'll end up with a full-flavored, decadent dish. The blue cheese and butter melt into the noodles, coating them with incredible flavor. Save some cheese to crumble on top at the end along with a handful of minced parsley.
