These veal chops are stuffed with a delectable blue cheese and herb filling. If you are not a fan of blue cheese, you can use feta or a cheese of your choice.
- 4 veal chops (boneless; about 1 inch thick)
- For the Stuffing:
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 apple (granny smith; finely chopped)
- 1/2 cup blue cheese (crumbled)
- 1 small shallot (finely chopped)
- 1 tablespoon olive oil
- 1 tablespoon basil (fresh and finely chopped)
To prepare stuffing: Combine all stuffing ingredients in a medium bowl. Set aside. Remove excess fat from veal and create a small pocket in each chop. Fill with a 1/4 cup of blue cheese mixture. Secure with toothpicks. Carefully brush chops with olive oil and season with salt and black pepper.
Preheat grill for medium heat. Place chops on grill and allow to cook for 6-7 minutes on each side, depending on thickness. Once cooked to desired doneness, remove from heat and let rest for a few minutes before serving.
