Made with a blueberry-lavender simple syrup, lime juice, and vodka, this refreshing soda spritzer is an easy happy hour cocktail that everyone will enjoy. The simple syrup is quick to prepare and makes enough for this pitcher as well as future beverages. Either fresh or frozen blueberries will work in this drink, and fresh lavender is best, although you can use dried food-grade lavender buds if need be.

Ingredients

For the Simple Syrup:

  • 1 cup water

  • 1 cup sugar

  • 1 cup blueberries, fresh or frozen

  • 4 sprigs organic fresh lavender, or 1 tablespoon dry culinary lavender

For the Vodka Spritzer:

  • 2 cups vodka

  • 4 ounces freshly squeezed lime juice

  • 1 liter club soda

  • 1 cup blueberries, fresh or frozen

  • Fresh lavender sprigs, for garnish

Steps to Make It

Make the Simple Syrup

  1. Gather the ingredients.

  2. Combine the water, sugar, and blueberries in a saucepan and bring to a boil over medium-high heat. Stir well to dissolve the sugar.

  3. Reduce the heat to a low simmer and add the lavender sprigs or dried culinary lavender. Let simmer for about 10 minutes.

  4. Strain the syrup into a jar; as you pour, use a masher or back of a spoon to squeeze all the remaining juice from the berries.

Make the Cocktail

  1. Gather the ingredients.

  2. In a glass pitcher, combine the vodka, 3/4 cup of the blueberry lavender simple syrup, the lime juice, and the liter of club soda. 

  3. Add ice and a healthy handful of blueberries.

  4. When you’re ready to pour, you can garnish each glass with some more blueberries and a sprig of lavender. Serve.

  • You can make the simple syrup ahead of time and mix the drinks for you and your guests with ease come cocktail time.
  • Keep the ready-made simple syrup on hand for any day of the week—you never know when you'll need a refreshing pick-me-up.
  • If using dried lavender, substitute 1 1/2 teaspoons of food-grade buds for the fresh sprigs.
