Brian Yong is head of culinary development at Xiao Chi Jie (XCJ). The Seattle-based restaurant and direct-to-consumer company specializes in honest representations of regional Chinese specialties, and is committed to opening minds and palates to new and exciting flavors, textures, and aromas.
An autodidact, chef and restaurateur, Brian’s appetite for tinkering and gastronomy were professionally realized following a sabbatical throughout China in 2017. Brian’s freshman menu (2018) at XCJ’s brick-and-mortar store in Bellevue, WA created a cult following in the Pacific Northwest, with a sophomore follow up in 2020 (www.thexcj.com) that has spread nationwide. When Brian is not cooking, he is thinking about cooking. When he is not thinking about cooking, he is thinking about eating.
