Serve this adorable Easter bunny butt cake at your big Easter celebration this year. It's super cute, easy to bake and assemble, and tastes delicious.

This a coconut cake covered in vanilla frosting and topped with...more coconut. This Easter bunny looks furry and sweet, just like the real thing.

Ingredients

  • 1 cup unsalted butter, softened

  • 3 cups sugar

  • 2 teaspoons vanilla extract

  • 1 teaspoon coconut extract

  • 4 large eggs

  • 4 1/2 cups cake flour

  • 2 tablespoons baking powder

  • 2 teaspoons salt

  • 2 1/4 cups milk

  • Cooking spray

  • 1 (16-ounce) container prepared vanilla frosting

  • 10 Oreo chocolate cookies

  • 4 cups shredded coconut

  • 1 teaspoon green food coloring

  • 10 small pink jelly beans

Steps to Make It

  1. Gather your ingredients.

  2. Preheat the oven to 350 F. Cream the butter and sugar together in a large bowl using a hand mixer or in the bowl of a stand mixer using the whisk attachment, for 10 minutes until light and fluffy.

  3. Add the vanilla and coconut extracts, then add the eggs one at a time, beating after each addition.

  4. Sift together the dry ingredients, the flour, baking powder, and salt.

  5. Alternate adding the milk and dry ingredients into the batter. Beat for another 5 minutes until fluffy.

  6. Prepare a large, ovenproof mixing bowl and a cupcake tin. Grease both generously with cooking spray, then coat them with a thin layer of flour, tapping off all of the excess. You only need to prepare 3 or 4 wells in the muffin tin.

  7. Pour 3/4 of the batter into the prepared ovenproof bowl.

  8. Fill 3 to 4 wells of the muffin tin with the remaining batter, 3/4 of the way up the sides.

  9. Bake the cupcakes and large cake in the oven. Take the cupcakes out after about 20 minutes, or until a toothpick comes out clean.

  10. Bake the larger cake for longer, about 35 to 40 minutes, or until a toothpick comes out clean.

  11. Allow all of the cakes to cool completely, then remove them from their pans.

  12. Gather the frosting and decorating ingredients.

  13. Take one of the cupcakes, and crumble it up. Mix the cake crumbs with 2 tablespoons of frosting. This will form a cake ball to make the tail. You can also use one of the cupcakes as a tail, but it looks a little better to have a rounder, smaller tail in comparison to the feet.

  14. Place the large cake on a cake stand. Trim the top of the cake before flipping it upside-down, so that it will lay flat on the plate. You can also add a layer of frosting around the base to hide any gaps.

    Stick 3 toothpicks into the cake where you want the tail and feet to be. Form the cake ball, and place it on 1 toothpick. Place 2 of the cupcakes on the other toothpicks.

  15. Coat the whole cake in a layer of frosting. It doesn't have to be super-tidy, since you'll be covering it in shredded coconut as well.

  16. Cover the entire cake in 3 cups of the coconut flakes. Pat down the areas where the tail and feet meet the cake, so they look distinct from the rest of the body.

  17. Grind the Oreo cookies in a food processor until they become "dirt" or very fine crumbs.

  18. Pat a circle of the Oreo cookie "dirt" around the base of the cake, so it looks like the bunny's butt is poking out of the dirt.

  19. Dye the remaining coconut green by mixing it with a few drops of food coloring in a bowl. Place a circle around the remaining base of the cake stand to look like grass.

  20. Use pink jelly beans to create the pads of the bunny feet. Then start showing it off.
