When cooking a deep-fried turkey, you want to get as much flavor as you can into the bird before it goes into the oil. This classic Cajun-inspired injection marinade will tenderize the turkey as it adds flavor.

What You'll Need

  • 1 cup vegetable oil
  • 3/4 cup white vinegar
  • 1/4 cup cayenne pepper
  • 1/4 cup black pepper
  • 1/4 cup Cajun Seasoning
  • 2 tablespoons Tabasco

How to Make It

  1. Combine all ingredients in a mixing bowl and blend well. This will settle quickly so keep it mixed.
  2. Thoroughly coat turkey with marinade. If possible work the marinade under the skin over the breasts.
  3. Place turkey in a large container or resealable bag. Refrigerate bird between 8 to 24 hours.
