This is a great recipe for trout, whether it's freshly caught them or store-bought. Wrapping the fish in bacon not only adds flavor but helps keep the fish moist and tender.

What You'll Need

  • 4 small whole trout, cleaned
  • 4 strips of bacon
  • 4 sprigs of fresh thyme
  • 1 lemon
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper

How to Make It

1. Oil and preheat grill. Rinse out the trout and pat dry with a paper towel. Salt, pepper, and place a sprig of thyme inside each fish. Wrap each trout with a strip of bacon and secure with a toothpick.

2. Place trout on the grill or in an oiled grill basket. Grill 6 to 8 minutes per side depending on the size of the trout. When the meat turns opaque in the center and easily flakes, the fish is done.

Discard bacon, squeeze a little fresh lemon juice over each fish and serve with tartar sauce.
