 Imagine this sandwich - a crunchy honey butter slathered waffle filled with crispy buttermilk fried chicken, drizzled in Sriracha maple syrup and topped with smokey bacon. I know, i know. It totally sounds like something out of a dream but wake up readers because this is real life and I'm sharing the recipe right here! 


  • 1 chicken breast (butterflied and pounded)
  • 1 cup buttermilk
  • 2 tsp hot sauce
  • 1 cup flour
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp white pepper
  • peanut oil for frying
  • 1/2 tbsp honey
  • 1/2 tbsp butter, room temperature
  • 2 tbsp pure maple syrup
  • sriracha (as much as you want!)
  • 2-3 pieces thick cut applewood smoked bacon (cooked)
  • 2 waffles (toasted)

Steps to Make It

  1. Gather the ingredients.

  2.  Begin by brining the chicken. In a ziplock back, mix the buttermilk and hot sauce and add the chicken. I think it's best if the chicken can brine for at least 24 hours, but 48 is even better.

  3. Heat your oil to 350-360 degrees. If you don't have a thermometer, you can also just heat your oil over medium high and add a little bit of flour - if it starts to fizzle and fry, then you're good to go.

  4. Meanwhile, mix syrup and as much Sriracha as you can handle - I used about a tbsp and it was perfect for me - set aside.

  5. In a shallow bowl, mix flour, paprika, salt and white pepper.

  6. When the oil is hot enough, take your chicken breast out of the ziplock back and let the excess liquid drip off.

  7. Dip the breast in the flour mixture, patting it down so that it's completely coated, then add it back to the buttermilk mixture, then back to the flour, so that it's a thick coating.

  8. Carefully add the chicken to the hot oil and allow it to cook until the batter is fried and crispy and the chicken has cooked through. 

  9. At this point, toast your waffles. I just used frozen Eggo's classic buttermilk waffles because I don't have a waffle maker but I'm sure it would be even better if they were homemade.

  10. Once the chicken is done frying, remove it from the oil, set it on some paper towels, and sprinkle it with a little salt.

  11.  Assemble the sandwich. Put a waffle down, add half of the Sriracha syrup, then the fried chicken, the bacon, the rest of the Sriracha syrup, the other waffle, the butter, and finally a little bit of honey. Serve immediately and enjoy!
