These chicken burgers are made flavorful and juicy with boneless chicken thighs and a variety of seasonings. If you're looking for a lighter burger, these are an excellent alternative.
You can use a meat grinder to grind the chicken but the food processor may be used to mince the chicken as well. You can also use a combination of cilantro and parsley in these burgers, or use all cilantro or all parsley if you have a preference.
Serve these moist, well-seasoned chicken burgers with sliced tomatoes, pickles, and lettuce, along with a spicy sriracha mayonnaise or chipotle mayonnaise.
- 2 to 3 teaspoons vegetable oil
- 1/3 cup onion (finely chopped)
- 2 medium cloves garlic (finely minced)
- 1 to 1 1/4 pounds boneless chicken thighs
- 1 cup cilantro (loosely packed, or parsley, or a combination)
- 1 tablespoon lime juice
- 1/2 teaspoon Cajun seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper (freshly ground)
- 1/4 cup breadcrumbs (fine dry)
- 1 egg white
Heat the oven to 400 F. Line a baking sheet with nonstick foil or spray with nonstick baking spray.
In a small skillet, heat the oil over medium heat. Add the minced onion and cook, stirring, until tender. Add the garlic and cook, stirring, for another 1 to 2 minutes. Remove from the heat and set aside.
Cut the chicken into chunks, discarding excess fat. Grind with a meat grinder or mince finely in the food processor. Mix in the seasonings, bread crumbs, and the onion and garlic mixture.
Chop the cilantro or parsley finely and mix into the chicken mixture.
Shape the chicken mixture into patties about 3 to 4 ounces each.
Arrange on the baking sheet and bake at 400 F for about 20 minutes, or until cooked through.*
