When your dinner plans include your pajamas and the couch, toss together this easy Chinese garlic chicken. Once you get the ingredients prepped, it takes just minutes to cook it over high heat in a wok or deep heavy skillet. Be sure to prepare everything before you heat up the oil, because the stir-frying goes quickly.

You can easily double this recipe to feed a larger group or provide leftovers for lunch the next day. But unless you have a large wok or skillet, you'll need to cook it in batches. The ingredients need room to move when you stir-fry.

What You'll Need

  • 1 pound boneless, skinless chicken breasts
  • For the Marinade:
  • 1 tablespoon light soy sauce
  • 1 tablespoon dry sherry
  • For the Sauce:
  • 1/4 teaspoon sesame oil
  • 2 tablespoons light soy sauce
  • 1 tablespoon dry sherry
  • 1/4 teaspoon chili paste
  • For the Stir-fry:
  • 2 tablespoons ​
  • oil for stir-frying
  • 4
  • garlic cloves, finely minced
  • 2 green onions (finely chopped on the diagonal)

How to Make It

  1. Cut the chicken into bite-size cubes. In a large bowl, mix the marinade ingredients; add the chicken and toss to coat. Marinate in the refrigerator for 20 to 25 minutes.
  2. While the chicken marinates, combine the sesame oil, soy sauce, sherry and chili paste in a clean bowl and set it aside.
  3. Heat a wok or deep heavy skillet on high and add the oil. When the oil shimmers, add the chicken and discard the marinade. Stir-fry the chicken for 2 to 3 minutes, then add the garlic and green onion and cook until fragrant, up to 1 minute. Add the sauce and combine, cooking for an additional 1 to 2 minutes. Serve the garlic chicken with rice and a side of steamed vegetables.
