This spicy chipotle gravy recipe is perfect served over meatloaf, roast beef, or steak. Don't forget to save some for the mashed potatoes!
In a medium saucepan, melt the butter over medium-low heat. Add the flour, and cook, stirring constantly, for 5 minutes.
Add the onion and garlic, and cook, stirring, for 1 minute. Slowly whisk in 1 cup of the stock until blended.
Stir in the remaining stock, ketchup, and chipotle pepper, and bring to a simmer, whisking often. Reduce the heat to low, and simmer for 20 minutes, whisking occasionally.
Season to taste with salt and pepper and serve hot.
