This spicy chipotle gravy recipe is perfect served over meatloaf, roast beef, or steak. Don't forget to save some for the mashed potatoes!
- In a medium saucepan, melt the butter over medium-low heat. Add the flour and cook, stirring constantly, for 5 minutes. Add the onion and garlic and cook, stirring, for 1 minute. Slowly whisk in 1 cup of the stock until blended.
- Stir in the remaining stock, ketchup, and chipotle pepper and bring to a simmer, whisking often. Reduce the heat to low and simmer for 20 minutes, whisking occasionally. Season to taste with salt and pepper and serve hot.
