Mug cakes first became popular a few years ago. The concept is simple: you mix a few ingredients in a mug or a cup and microwave it to make an instant treat. These little cakes are tender and moist, with a texture that is simply divine.

Chocolate Peanut Butter Cake in a Cup is so delicious and so simple to make; it takes just five minutes! I keep a box of cake mix in my pantry just for this recipe; mark it so no one thinks they can make a cake from what's left over! This cake is moist and rich and has the most wonderful fudgy peanut butter flavor.

I like to top this with a spoonful of peanut butter or Nutella and let it melt into the cake. Or you can top it with some ice cream or whipped cream or even creme fraiche for a fancy touch.

Here's a note: I thought Nutella would work as well as the peanut butter in the recipe - but it doesn't. Something in that product makes the cake stay liquid, so don't try it!

Keep the ingredients for this recipe on hand so you can make it anytime you'd like. Teach your kids how to make this recipe too (and about microwave safety) and they can have a snack when they get home from school or if they are just hungry.

What You'll Need

  • 1/2 cup chocolate cake mix
  • 2 tablespoons peanut butter
  • 3 tablespoons milk
  • 2 tablespoons vegetable oil
  • 2 tablespoons mini chocolate chips, if desired

How to Make It

Spray a 1-1/2 cup (12 ounce) microwave-safe mug or cup with nonstick baking spray containing flour. Then add the chocolate cake mix, peanut butter, milk, and mini chocolate chips to the mug or cup and mix together well with a fork until the mixture is smooth.

Microwave on high for 1 minute for a 800 to 1000-watt microwave oven; 1 minute and 15 seconds for 600 watt microwave ovens and below. The batter will puff up and the surface will look like a cake.

Remove carefully from the microwave; the cup may be hot. Put the cup on the counter and let stand on a solid surface for 1 minute, then eat. The cake will deflate a bit as it stands. I do like to drizzle the top of the cake with some Nutella for a nice finishing touch and extra flavor. The cake may have a fudgy layer on the bottom; that's okay! Just enjoy every bite.
