Breakfast casseroles are so easy to make and are so versatile! You've probably seen lots of different tater tot casseroles for breakfast or other meals with bacon, and cheese, and eggs. They all look so delicious but have you tried try adding sweet potato and all of its nutritional benefits? The sweet potato tater tots and spicy chorizo sausage make this breakfast casserole especially unique and so delicious! The savory and spicy sausage mixes with the sweet and succulent sweet potato and it's heaven!
You can easily substitute regular tater tots too, but the sweet potatoes go so well with the other flavors!
You can make this casserole ahead of time and store it in the refrigerator for a day or two, or the freezer for a month or two! Just make sure it's wrapped up tightly! It's also really cute made in a pie shape! You can easily slice it up and serve it to hungry guests! Just make sure that the pan has been well greased!
You can also make smaller portions of this casserole in muffin cups! Pop them out and take them to go! You can also remove the chorizo and replace it with turkey sausage and omit the Sriracha if you are looking for something that is not so spicy!
Serve up this casserole recipe with a dollop of sour cream and a warm cup of joe!

Serve immediately and enjoy!
Glass Bakeware Warning
For premade casseroles or leftovers that are in a glass baking dish and have been refrigerated, do not place directly into a hot oven as the glass can shatter. Instead, place any cold glass bakeware into a cold oven to warm up while it preheats. Or, allow the bakeware to rest outside of the fridge for 30 minutes to reach room temperature while the oven preheats.
