Cinnamon muffins are a delicious addition to a quick breakfast or as a snack and they are even better when you add chocolate chips. This fun and simple recipe is kid-approved and was actually the idea of a young man who enjoys chocolate chips in almost everything.
Possibly the best part about this recipe is that it's a fun family activity. Your children will love to help out in the baking process and it's an easy recipe that introduces them to the kitchen.
The reward for your not-so-hard work is a bunch of warm and tasty cinnamon chocolate chip muffins. It's a fun treat that the entire family will love to eat.
- 2 cups flour (all-purpose)
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup sugar
- 2 tablespoon butter (softened)
- 1 medium egg (lightly beaten)
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 3/4 cup chocolate chips
Preheat the oven to 400 F.
Grease a regular-sized 12-cup muffin tin or place liners inside each cup.
In a medium bowl, mix together flour, baking powder, salt, and sugar.
Cut in the butter.
Add the egg, milk, vanilla extract, and cinnamon.
Mix until the flour is wet.
Fold in chocolate chips.
Fill the muffin cups 2/3 full.
Bake for 20 minutes or until an inserted knife or toothpick comes out clean.
Remove muffins from the tin with a spoon and serve warm or cold.
- Pour your muffin batter into the tins as soon as you finish mixing the ingredients. You can combine the wet and dry ingredients separately ahead of time, but once the two meet, the baking powder activates and they need to be baked immediately.
- Remember that you need to use a spoon or rubber spatula to fold in the chocolate chips. The motor on your electric mixer will almost certainly work too hard and it may burn up if you attempt to use it.
- Muffins expand and rise as they bake. That is why it's very important to fill the tins only 2/3 full.
- If you do not have enough muffin batter to fill all the cups, fill the empty cups with a small amount of water. This distributes the heat evenly and will protect your muffin tin from bending over time.
- Stuck muffins are almost always a sign of overbaking. To make removing the muffins easier, pay close attention to the baking time and check them regularly.
- If you do not have a convection oven that distributes even heat and are baking more than one tin at a time, rotate the tins half way through the bake.
