Cinnamon Roll French Toast & Cinnamon Cream Syrup Recipe

I was in my kitchen a few days ago and realized that I had four cinnamon rolls just sitting on the counter going stale. I knew no one in my family would eat them as they were, so I came up with this recipe for Cinnamon Roll French Toast. You, too, can make this recipe if you've got some leftover cinnamon rolls. Don't have any stale Cinnamon Rolls? You can probably find some day-old cinnamon rolls for sale in your grocery store. You could also use most any other sweet rolls with this recipe for French Toast. Be sure to serve it with your own homemade Cinnamon Cream Syrup.


  • Cinnamon French Toast: 
  • 5 eggs
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 2 teaspoons cinnamon extract
  • 1 teaspoon ground cinnamon
  • 4 (day-old, almost stale) cinnamon rolls, sliced in half horizontally
  • Cinnamon Cream Syrup: 
  • 1 cup heavy cream or evaporated milk
  • 3 tablespoons brown sugar
  • 1 teaspoon cinnamon extract
  • 1 teaspoon ground cinnamon
  • 5 tablespoons butter

Steps to Make It

Cinnamon Roll French Toast 

  1. In a large bowl, beat eggs, salt, and sugar until frothy.

  2. Add milk, cinnamon extract and ground cinnamon, mix until combined.

  3. Place sliced cinnamon rolls cut edge up in a 9x13 baking pan.

  4. Pour egg mixture over bread, smash down with fingers or rubber spatula to allow bread to begin to soak up liquid; refrigerator overnight.

  5. Preheat oven to 350 degrees F.

  6. Bake for 25 minutes or until set.

  7. Serve warm with Cinnamon Cream Syrup.

Cinnamon Cream Syrup

  1. Place cream in a small saucepan; whisk in brown sugar, cinnamon extract, ground cinnamon.

  2. Heat until cream mixture steams and sugar has melted.

  3. Add butter. Stir until butter melts.

  4. Serve warm over your freshly baked Cinnamon Roll French Toast.


  • Want to make these on the same day? Allow the bread to soak at least for a 1/2 hour before putting it in the oven.
  • Don't want to bake the French Toast? You could fry the soaked rolls in a buttered pan on the stove (it just won't be quite as tasty as the baked version).
  • The cinnamon rolls I used didn't quite fill the baking dish, so I filled the empty spaces with a piece of torn-up leftover French bread.
