This recipe for cinnamon streusel coffee mug cake is so easy because it uses a prepared cake mix. All you have to do is scoop out some cake mix from the box and mix it with water. The cake mix does the work for you and it cooks up perfectly in the microwave. This recipe calls for yellow cake mix to achieve that classic crumble-topped coffee cake look, but you can feel free to use any cake mix you have on hand—just be sure to store the remaining cake mix in a resealable plastic bag for future use. Once you get a taste of fresh coffee cake in the morning, you will be hooked!
The best part about this coffee cake in a mug is that the prep time is a snap. Plus, the recipe only uses the microwave, it is also safe for older children to prepare and feel successful in the kitchen. Just be sure to use care when taking the mug out of the microwave in-between steps and when ready to top and serve. 1 tablespoon chopped pecans
2 teaspoons all-purpose flour
1 teaspoon brown sugar
1/4 teaspoon cinnamon
1 teaspoon cold butter
2/3 cup yellow cake mix
6 tablespoons water
Gather the ingredients.
To make the streusel topping, combine the chopped pecans, flour, brown sugar, and cinnamon in a small bowl.
Cut the butter into small cubes and press into the flour mixture with a fork until it resembles coarse crumbs. Set aside in the refrigerator while making the cake.
To make the cake, put the cake mix and the water into a 12-ounce mug. Use a fork to stir them together until they are smooth.
Microwave for 60 seconds.
Top with the streusel topping and microwave for 60 more seconds.
