Comte is one of my favorite cheeses to use on sandwiches. Not only does it melt perfectly but it's got a sweet and nutty bite that lends well to just about everything. When it's melted down with sweet and tart fresh pineapple and savory rosemary-infused ham, the flavors of this cheese intensify and become even better.Â
Ingredients
- 5 slices ham (fra’mani rosemary ham)
- 1/4 pound Comte cheese (shredded)
- 2 tsp. butter (such as Vermont Creamery cultured butter)
- 1 pinch salt (smoked sea salt)
- 2 thick slices bread (Sourdough)
- 2 tbsp. pineapple (fresh, chopped)
Steps to Make It

Gather the ingredients.

Begin by assembling the sandwich. Start by adding half the cheese onto one slice of bread. Next add the ham, then the fresh chunks of pineapple and then the remaining comte. Add the other slice of bread and carefully butter both sides of the sandwich. Add a sprinkle of the smoked sea salt and set aside.

In a medium sized pan (we always recommend cast iron) turn the heat to medium and gently place your sandwich in.

Let the sandwich cook for a few minutes on each side until the exterior of the bread gets crisp and golden-brown.

Once one side is done, carefully flip and repeat until both sides are evenly toasted and all of the comte has melted. Remove from heat and let sit for one minute before eating. This one extra step helps let the cheese bind to the other ingredients which make eating a lot easier!
