Crab Stuffed Jalapenos Peppers

In this recipe, whole jalapeno peppers are stuffed with a savory crab filling, then the peppers are breaded and deep fried.

Ingredients

  • 1 large can whole jalapeno peppers (approx. 28 ounces)
  • For the Filling:
  • 1 pound flaked crabmeat
  • 2 tablespoons finely chopped green bell pepper
  • 2 tablespoons finely chopped onion
  • 1/4 cup cracker meal
  • 1 egg, beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper
  • 1 garlic clove, minced
  • 1/4 cup milk
  • For the Breading:
  • 2 cups cracker meal
  • 1 cup milk
  • 2 eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Steps to Make It

  1. Cut peppers in half lengthwise. Discard pulp and seeds and rinse carefully.

  2. In a large mixing bowl, combine remaining crab filling ingredients.

  3. Stuff pepper halves with crab mixture and press stuffing around the pepper. Set peppers aside.

  4. Prepare breading mixture. Place the 2 cups cracker meal in a wide, shallow dish or pie plate. In another bowl mix together milk, eggs and salt and pepper.

  5. Dip peppers in egg mixture, then roll in the cracker meal to coat thoroughly. Repeat procedure with all peppers.

  6. Deep fry at 365 F, until golden brown.

  7. Drain on paper towels or brown paper.
