This cranberry pork loin recipe combines the flavors of garlic, whole cranberry sauce, and chopped apples with a touch of brown sugar to make a sweet and savory dish that everyone will think you labored over for hours. But the secret is that this easy-to-fix pork loin is made in the slow cooker, doing all of the work for you.
This festive recipe is an ideal dish for the holiday table, not only because of its ingredients but also since it is so simple to make, allowing the cook to focus on the rest of the meal. Serve the pork sliced with bread or cornbread dressing or mashed potatoes, along with green beans or your family's favorite side vegetables.
- 1 (3 to 4 pounds) boneless pork loin roast
- 2 cloves garlic (minced)
- 1 can whole cranberry sauce
- 1/4 cup brown sugar
- 1/2 cup apple juice
- 2 apples (cored, peeled, and coarsely chopped)
- Salt and pepper to taste
- Optional: 1 1/2 tablespoons cornstarch plus 2 tablespoons cold water
Place the pork loin roast in the slow cooker and coat all sides with the minced garlic.
In a bowl, combine the cranberry sauce, brown sugar, apple juice, and chopped apples. Pour sauce over pork.
Cover the crockpot and cook on LOW for 7 to 9 hours. Taste the sauce and add salt and pepper as needed.
If you think the sauce needs thickening, you can add a cornstarch slurry. In a small bowl, stir the cornstarch with the cold water until smooth. Add the slurry to the liquids and stir to blend. Increase the setting to HIGH and continue cooking for 5 to 10 minutes, until thickened.
Remove the pork from the crockpot onto a cutting board. Slice the pork and arrange on a platter. Spoon over sauce and serve.
