Creamy Vegetable Beef Soup with Ground Beef

What You'll Need

  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped onion
  • 2 teaspoons butter
  • 2 teaspoons extra virgin olive oil
  • 1/2 pound lean ground beef
  • 1 cup tomato juice
  • 1/2 cup diced potato
  • 1/2 cup diced carrots
  • 1 1/2 teaspoons salt
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk

How to Make It

  1. Heat 2 teaspoons butter and olive oil in a skillet over medium-low heat; sauté green bell pepper and chopped onion until soft. Add ground beef and cook, stirring and breaking up, until browned. Drain off excess fat.
  2. Add tomato juice, potatoes, carrots, and salt. Cover and simmer 20 minutes, or until vegetables are tender.
  3. Melt butter in a medium saucepan over medium-low heat; blend in flour until smooth and bubbly. cook, stirring, for 2 minutes. Gradually stir in milk and cook, stirring constantly, until thickened.
  1. Blend sauce with beef and vegetable mixture in the skillet. Heat through and serve.
