This vegetarian crock pot recipe uses seitan instead of meat for a classic and hearty "meat" and potatoes stew recipe. Seitan is derived from wheat protein and typically stands if for meat in many recipes; if fact, some vegetarians are known to avoid if because the texture is too much like real meat!

Carrots, celery, onions and garlic add a boost of flavor to this stew. Feel free to add a few of your favorite fresh or dried herbs for an extra kick.

Ingredients

  • 1 pound seitan, chopped
  • 1 onion, diced
  • 5 cups vegetable broth
  • 2 tbsp. soy sauce
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 3 carrots, diced
  • 3 potatoes, chopped
  • 2 stalks celery, diced
  • 1 tsp. salt
  • 3/4 tsp. pepper
  • 4 tbsp. cornstarch mixed with 4 tbsp. water until smooth

Steps to Make It

  1. Gather the ingredients.

  2. Saute the seitan in a little bit of olive oil first, if you'd like. If you're pressed for time, you don't need to, but it will give the seitan a bit of extra flavor if you do.

  3. Place all the ingredients in a crock pot or slow cooker. Cook on low for 6 to 8 hours.
