This rich and flavorful recipe for crockpot pork and beans is one of the easiest to make. Just open cans, plop food in the slow cooker, turn it on, and dinner is ready when you are. The combination of rich, smoky, and sweet beans with onion, ketchup, and mustard provides a flavorful base for the tender pork chops.

Serve this hearty, warming dish with a green salad tossed with avocado and mushrooms, some steamed asparagus or green beans, and some delicious brownies for dessert.

  • 1 onion (chopped)
  • 2 (20-ounce) cans pork and beans (partially drained)
  • 1/3 cup ketchup
  • 1/4 cup mustard
  • 6 boneless pork loin chops (trimmed of excess fat)

  5. Cover the crockpot and cook on low for 8 to 9 hours until pork is tender. If you have a newer, hotter cooking crockpot, check the chops for doneness at 7 hours.

  • You can sauté the pork chops in a bit of oil or butter before you add them to the beans in the slow cooker, but you don't have to. That step will just give the meat more color and a bit more flavor. Just cook them for two to three minutes on each side, turning once. Drain on paper towels, then add to the slow cooker.
  • Make sure that you trim excess fat off the chops, especially if you don't brown them first. Too much fat in a slow cooker can speed up the cooking time, and may make the finished dish too greasy. Choose loin chops, which have more meat. While we prefer boneless pork chops in this recipe, you can use bone-in chops. Pork should be cooked to a minimum temperature of 145 F, but that won't be a problem with this recipe.
  • Choose quality, brand name baked beans for this recipe. Because there are so few ingredients, each one has to be of very good quality for the recipe to be delicious.
  • You may want to drain the cans of pork and beans a bit before using them in this recipe. Some can have quite a bit of liquid, which can make the finished dish too runny. Use your own judgment when you open the cans. Just discard the excess liquid.
