Dark Pumpernickel Bread has the most wonderful texture and flavor. And it is made so easily in your bread machine.

If you have never used a bread machine, try it. They are really not that expensive and make creating wonderful loaves of bread so simple. Get it and you'll never be without fresh bread.

When you use a bread machine, add the ingredients in the order listed. The yeast is added last so it doesn't come into contact with the liquid and start growing until the ingredients are mixed and kneaded by the machine. This is especially important if you are using the delayed start feature.

You could add some chopped toasted walnuts to this bread after it is mixed and before the baking process begins. They add a wonderful crunch.

This bread is really good toasted, spread with whipped honey or some raspberry or apricot jam. There's nothing better for a hearty breakfast.


  • 1 1/4 cups water
  • 1 1/2 tablespoon oil
  • 1/3 cup molasses
  • 1 1/2 teaspoon salt
  • 1 1/2 cups flour (bread flour)
  • 1 cup flour (medium rye)
  • 1 cup flour (whole wheat)
  • 3 tablespoons wheat gluten
  • 3 tablespoons cocoa powder
  • 1 tablespoon caraway (seeds)
  • 2 teaspoon yeast (active, dry)

Steps to Make It

  1. Gather the ingredients.

  2. Place all ingredients in a bread pan, using the smallest amount of liquid in the recipe. Be sure that you add the ingredients in the order they are listed. Do not stir or mix the ingredients.

  3. Put the cover on the machine.

  4. Select Medium Crust setting and Whole Wheat Cycle and press Start.

  5. Observe the dough as it kneads. If after 5 to 10 minutes it appears dry or if your machine sounds as if it's straining, add more liquid 1 tablespoon at a time until the dough is smooth, soft, and slightly tacky to the touch.

  6. Then let the machine work. It will knead, then let the dough rise, then the bread will bake. 

  7. After the baking cycle ends, cool bread on a wire rack for 1 hour before slicing.
