These tender, delicious date muffins are made with a hint of orange extract, but you may use vanilla extract instead if you prefer. But whether you use orange or vanilla, these muffins are a delightful way to start the day, or a perfect treat to enjoy with tea or coffee.

  • 1 cup milk
  • 1 egg (beaten)
  • 1 teaspoon vanilla (or orange extract)
  • 2 cups flour (all-purpose, stir before measuring)
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 2/3 cup sugar
  • 1/2 cup walnuts (chopped)
  • 1 cup dates (chopped)
  • 5 tablespoons butter (melted)

Steps to Make It

  1. Gather the ingredients.

  2. Preheat oven to 400 F.

  3. Mix milk and egg together in a mixing bowl; add extract.

  4. Sift together the dry ingredients, including sugar. Add to milk and egg mixture. Mix until well moistened.

  5. Fold in walnuts and dates, then the melted butter, mixing just enough to blend.

  6. Bake in preheated oven for 15 to 18 minutes, or until date muffins are nicely browned.

  7. Serve and enjoy!
