Prep 3 Delicious Meals from 2 Big Steaks

If you’re already cooking one steak, you might as well cook two and save the second one to incorporate into a few different meals throughout the week. This marinated London broil keeps well in the refrigerator and can be easily stretched into stir fries and salads that are heavier on the vegetables than meat.

Game Plan

Time: 1 hour (plus 4 hours marinating)

  1. Double the amount of steak, but triple the marinade ingredients. Reserve one-third of the marinade to serve with the steak. 
  2. Organize and prep ingredients (chop vegetables and herbs, make vinaigrette) for Dinners 2 and 3 while the steak marinates. 
  3. Cook one steak as directed until medium-rare. Cook the other one slightly less, since it will be heated again as you prepare Dinners Two and Three. 
  4. Serve the medium-rare steak right away, then halve the rest and refrigerate in separate containers for the next dinners.

Prep Day Dinner: Steak and Potatoes 

Marinated London broil and baked potatoes is one of the all-time classic dinner combinations. If you have time, add creamed spinach on the side, or something a bit lighter, like sauteed spinach, to cut the richness.

Getting Dinner on the Table

  • Adjust recipe for baked potatoes to make 4 (instead of 6). 
  • Begin baking the potatoes while the steaks come to room temperature (before cooking, but after marinating). 
  • Buy already-rinsed spinach and cook it while the steak rests.
  • Offer bowls of butter, sour cream, and minced chives for topping the baked potatoes.

Stir Fry Night 

Stir fries are lightning-fast by nature. This beef and vegetable one, made with steak that has already been seared, lets you serve a healthy, tasty weeknight dinner in record time. Pair it with white rice or noodles.

Getting Dinner on the Table

  • Use 2 cups sliced steak (about half of one of the cooked London broil) in place of the roast beef.  
  • Substitute 1 pound mixed chopped fresh vegetables (broccoli florets, snow peas, and thinly sliced carrots, for example) for the frozen ones, depending on what’s in season. 

Steak Salad Night

Stretch the remainder of the cooked London broil into a main-course salad that will satisfy even the heartiest appetites. Make the dressing up to 1 day ahead to save time just before serving the salad. Offer a sliced baguette on the side.

Getting Dinner on the Table

  • Use the remaining half pound of cooked steak, either at room temperature or quickly cooked on the stovetop until heated through. 
  • Double all other ingredients.
  • Skip the first 3 steps of the steak recipe and start with step 4.
  • Add sliced avocado to bulk up the salad.
