Before you know it, summer's winding down and it’s time to start planning for Back-to-School. So many things to start thinking about–school supplies, making sure your kids haven’t outgrown there fall and winter clothes and of course, back-to-school dinners that make life easy for you, and delicious for everyone.

    Simple Baked Pasta with Bolognese Sauce

    My family likes nothing better than an Italian, red sauce-y, baked pasta dish on a chilly night. I love how easy they are to throw together. This one is kind of like an unstructured lasagna. You can use any meat sauce (or even a vegetarian tomato sauce) in place of the Bolognese. Just make a simple green salad as a side and you are good to go.

    Caramelized Onion and Parmesan Burgers

    Richly caramelized onions and earthy mushrooms provide wonderful depth of flavor to this burger. The longer you can cook the onions, the better, but keep the heat low and stir frequently so that they don’t burn.

    You can certainly use button mushrooms or cremini here, but I love using mixes of wild mushrooms which result in every bite being a little bit different, and making the pizza all the more interesting. That’s also why I love using a blend of colors with the cherry tomatoes, to add another layer of visual interest. So, in flavor and in looks, this pizza kind of keeps you on your toes, in a really good way. The small amount of smoked mozzarella also seems to echo the earthiness of the sautéed...MORE mushrooms in a really nice way.

    Just a few ingredients can provide a family-friendly balance of sweet (maple syrup) and savory (oregano and butter). Serve this with a salad and either couscous or rice. I'm a huge fan of pork loins, which are an inexpensive, easily available and versatile cut of pork. Leftovers are great thinly sliced into a sandwich or chopped and added to a stir-fry.

    These meatballs incorporate the technique of The Blend–this is the notion that using mushrooms in a recipe that would normally feature primarily meat is a plus on a few levels. They taste like the inside of a really good dumpling!

    Starting with store-bought ravioli from the refrigerated aisle of the supermarket, this creamy dish comes together quickly, and is perfect on a chilly evening. You can make this in a traditional square lasagna pan, or in an oval or round pan since you definitely don’t need to cut it into squares to serve.

    Roasted Chicken Thighs with Fresh Basil

    Slipping a few fresh herbs under the skin is a very nice way to brighten up a plain piece of roasted chicken without adding a whole lot of time to the process. Serve with a nice wild rice blend, and a crisp green salad, and no one will guess how little time the whole meal took to come together.
