A chicken in your crock pot is a wonderful thing. Easy crock pot chicken recipes are on the menu at my house several nights a week. In the moist environment and low cooking temperature of a crock pot, the chicken's flavors and texture blossom. Nothing tastes as 'chickeny' as slow cooker chicken recipes!

Remember that boneless, skinless chicken breasts can overcook in the crockpot. Make sure that these cuts don't cook longer than 6 to 7 hours on low.

Chicken thighs have a richer flavor, and can cook for a longer period of time; 8 to 9 hours is typical. And whole chickens cook for the longest time period; 8 to 10 hours is the norm. Be sure to follow the layering instructions in the recipe; chicken should be placed on top of root vegetables.

An instant-read meat thermometer is the best indication of doneness. Chicken breasts should be 165° F; dark meat should be 170° F, and whole chickens 170° F. If you don't have a meat thermometer, prick the chicken with a knife. If the juices run clear, not tinged at all with pink, the chicken is done. (But for the safest result, please have a meat thermometer!)
