These easy date finger cookies are made with rice cereal, butter, chopped nuts, and other ingredients. These are similar to the popular date skillet cookies.
Gather the ingredients.
In a saucepan, combine the dates, sugar, pecans, butter, and egg; cook over medium heat, stirring, until bubbly.
Cook over low heat, constantly stirring, for about 6 minutes.
Remove from the heat and stir in the salt, vanilla, and cereal.
Cool the mixture.
Keeping hands moistened with cold water, shape the cooled date mixture into finger shapes.
Roll the fingers in coconut.
