These easy date finger cookies are made with rice cereal, butter, chopped nuts, and other ingredients. These are similar to the popular date skillet cookies.

Ingredients

  • 1 (8-ounce) package dates (chopped)
  • 3/4 cup granulated sugar
  • 1 cup pecans (chopped)
  • 6 tablespoons butter
  • 1 egg (lightly beaten)
  • Dash of salt
  • 1 teaspoon​ vanilla
  • 2 1/2 cups crispy rice cereal
  • 3/4 to 1 cup flaked coconut

  2. In a saucepan, combine the dates, sugar, pecans, butter, and egg; cook over medium heat, stirring, until bubbly.
