Eggplant is a kind of nightshade, which also includes plants like potatoes, peppers, and tomatoes. It’s also referred to as aubergine in various European countries, and brinjal in South Asia and South Africa. There are several cultivars, each with a different size, shape, and color, though most remain a lovely shade of purple. Regardless of the type, eggplant is a popular ingredient for its ability to absorb flavor and develop a rich, creamy texture when cooked. Many cooks insist on first salting or brining eggplant to draw out any excess moisture, but others skip this step, favoring a simpler approach and preparation.
