This is one of those super-quick and easy vegan dessert recipes that you think will taste funny but are absolutely decadent. Peanut butter pie with tofu is a relatively healthy vegan dessert perfect for the kids (or the kids-at-heart!).

The vegan baker extraordinaire behind the Veganmouse blog made this peanut butter pie and topped it with pretzels, chocolate and extra peanut butter for a rich and gooey treat, but some crushed peanuts and extra chocolate as pictures would also be lovely.

  • 16 ounces silken tofu

  • 1 cup creamy peanut butter

  • 3/4 cup sugar

  • 2 tablespoons soy milk

  • 2 teaspoons pure vanilla extract

Steps to Make It

  1. Gather the ingredients.

  2. Combine the tofu, peanut butter, sugar, soy milk and vanilla in a food processor or blender and blend until smooth.

  3. Spoon into the pie shell. Refrigerate at least 2 hours and serve.
