English muffin pizzas are a quick snack, kid-friendly lunch or dinner, or savory breakfast. The toasted English muffin halves topped with tomato sauce and cheese are fast, easy, and fun to customize.

The most important step is toasting the English muffins before topping them so they won't become soggy. Once toasted, the muffins can stand up to all kinds of toppings. The recipe here aims for a New York-style quantity of sauce and cheese, but if Chicago style is more your thing go ahead and pile it on. The toasted muffin can handle it. As for the sauce, classic marinara is always a favorite, but you can swap for pesto, alfredo, and more.

Ingredients

  •  2 English muffins (split into four halves)
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup homemade or store-bought pizza sauce
  • 1/2 cup low moisture part-skim shredded mozzarella cheese

Steps to Make It

  1.  Gather the ingredients. Preheat the oven to 425 F.

  2. Toast the English muffins. Use your toaster or place the English muffin halves on a sheet pan and toast them in the oven until lightly browned and a little crispy, about 5 minutes. Remove from the oven.

  3. If you haven't already, place them on a sheet pan. Drizzle each toasted muffin half with about 1/2 tablespoon extra virgin olive oil, then add 1 tablespoon of pizza sauce onto each muffin half and spread evenly. Top each sauced muffin with 2 tablespoons of the shredded mozzarella cheese.

  4. Put the sheet pan in the oven and bake until the cheese is melted and a little bubbly, about 8 minutes. Remove from the oven.

  5.  Allow the English muffin pizzas to cool for 2 minutes, then serve. Enjoy!

Tips

  • Any type of English muffins will work for this recipe, from whole-grain to sourdough to gluten-free.
  • To freeze English muffin pizzas, just wrap the pizzas in a sheet of parchment or wax paper and put them in a sealed container in the freezer. They'll keep there for four to six months.
  • There's no need to defrost before baking; just pop them in the oven or toaster oven and bake for about five minutes longer than normal.

Recipe Variations

You can put all kinds of toppings on the English muffins:

  • Pesto, alfredo, and spicy tomato are just a few alternative sauces.
  • Other cheese options include parmesan, ricotta, asiago, gorgonzola, and taleggio (or a mixture).
  • Meat like sausage, bacon, or beef are tasty, just sauté them first. Pepperoni and ham are also good choices.
  • Try vegetables like peppers, onion, mushrooms, and more. Vegetables could be either cooked or raw before topping, but note that most vegetables won't fully cook before the cheese melts and the pizza is ready to eat. It's often a good idea to par-cook the vegetables halfway before topping and finishing in the oven.
