This delicious fresh cherry cobbler recipe is a great way to use your fresh tart cherries also known as pie cherries. The topping for this cobbler is not made with a pastry or pie dough but instead features drop dumplings that bake up fluffy and golden brown. (If you're short on time, use Bisquick or a biscuit baking mix and follow the instructions on the package for making dumplings.)

Serve this delicious cobbler hot with a pour of heavy cream, or slightly cooled with vanilla ice cream or freshly whipped cream. 


  • For the Cherries:
  • 1 1/4 cups sugar
  • 3 tablespoons cornstarch
  • 4 cups pitted fresh tart cherries
  • 1/4 teaspoon almond extract
  • For the Dumpling Topping:
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons vegetable shortening
  • 1/2 cup cold milk

Steps to Make It

Make the Cherry Filling

  1. Gather the ingredients.

  2. Heat the oven to 400 F. 

  3. In a medium saucepan, blend together sugar, cornstarch, cherries, and almond extract. Cook over medium heat, stirring constantly until mixture thickens and boils.

  4. Continue to boil and stir for 1 minute. Pour fruit mixture into an ungreased 2-quart casserole. Place in oven while preparing the dough.

Make the Dumpling Dough

  1. In a medium mixing bowl, whisk together flour, sugar, baking powder, and salt until thoroughly incorporated.

  2. Cut shortening into the flour mixture as you would for pie dough. Add the cold milk and mix until thoroughly incorporated and no streaks of dry ingredients show.

  3. Remove cherry-filled casserole dish from the oven and drop the dough in spoonfuls, making about 6 dumplings, onto the hot fruit.

  4. Return to the oven and bake 25 to 30 minutes, or until topping is golden brown. Serve warm with cream if desired, or cool slightly and serve with vanilla ice cream or whipped cream.


  • If you don't have a cherry pitter, use a plastic or metal straw to remove the pits. Wash the cherries, de-stem them, and push the straw through the stem hole until the pit comes out the bottom of the berry. Wear an apron or old shirt since cherry juice splatters are likely.
