These famous fried Buffalo wings are served with the classic blue cheese dip. This version is deep fried to perfection, but I also like this recipe for lighter baked Buffalo wings

If you don't care for the blue cheese dip, serve the wings with this homemade ranch dressing or spicy chili mayonnaise.

Use whole chicken wings or cut them at the joints. Drumettes are great, too, and they're meatier. Serve as an appetizer or as part of a family meal. These are excellent for a game day gathering or tailgating.

After the wings are tossed with the sauce, transfer them to a slow cooker set on warm or low for serving. Have small plates, napkins, and small containers of the chilled blue cheese dip available for guests.


  • For the Blue Cheese Dip
  • 3/4 cup mayonnaise
  • 1 clove garlic (minced)
  • 2 tablespoons fresh parsley (finely chopped)
  • 1/2 cup sour cream
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon white vinegar
  • 1/2 cup blue cheese (crumbled)
  • dash salt
  • dash black pepper
  • For the Wings
  • 4 pounds chicken wings
  • salt and freshly ground black pepper
  • oil for deep frying (corn oil, canola, or high-heat safflower, or another neutral flavor oil)
  • 1/4 cup butter
  • 1/4 cup hot pepper sauce, such as Texas Pete or Frank's Red Hot
  • 1 tablespoon white vinegar

Steps to Make It

  1. In a medium bowl combine the mayonnaise, minced garlic, parsley, sour cream, lemon juice, vinegar, and blue cheese. Taste and add salt and freshly ground black pepper, as needed. Cover and refrigerate for at least an hour before serving.

  2. Heat the oven to 200° F. Place a rack in a large rimmed sheet pan or roasting pan.

  3. If the wings are whole, cut the tips off and then slice them at the joint.

  4. Sprinkle the chicken wings with kosher salt and freshly ground black pepper.

  5. Heat the oil in deep fryer to 370°.

  6. Fry the wings in batches until crispy and cooked through, or about 10 minutes. Transfer to the rack in the pan to drain; keep warm in the preheated oven while cooking subsequent batches.

  7. When all batches are cooked, transfer the wings to a large bowl.

  8. In a small saucepan, melt the butter; stir in hot sauce and vinegar. Pour over wings and toss to coat wings thoroughly. 

  9. Serve the cooked Buffalo wings with the blue cheese dip.

Tips and Variations

Meatier drumettes may be used instead of whole wings (drumettes and flats).
