Glazed Peach Pie

This peach pie is filled with sliced peaches and topped with a wonderful peach glaze. 

Serve the pie with a scoop of vanilla ice cream or drizzle with cream.

What You'll Need

  • 1 9-inch pie shell, baked
  • 1 quart fresh peaches (peeled and slicedexcess liquid drained)
  • 3/4 cup water
  • 1 cup sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla
  • 2 teaspoons lemon juice
  • 1 tablespoon butter
  • 1/8 teaspoon salt
  • Optional: 2 cups sweetened whipped cream (or whipped topping)

How to Make It

  1. Mash 1 cup of the peaches.
  2. Add water and cook four minutes.
  3. Mix sugar and cornstarch; add to the fruit mixture. Cook until thick and clear.
  4. Add vanilla, lemon juice, butter, and salt. Let cool.
  5. Arrange remaining peach slices in the cooled pie shell.
  6. Pour cooled peach glaze mixture over the sliced fruit. Chill.
  7. To serve, top with whipped cream or whipped topping and a few small peach slices if desired. Or, serve with vanilla ice cream.
