These grilled tomatoes are rich in flavor, yet simple to prepare. Remember to look for large ripe tomatoes for this recipe.

What You'll Need

  • 4 large tomatoes, cut in half crosswise and seeded
  • 1/2 cup/120 mL crumbled blue cheese
  • 1/3 cup/80 mL Parmesan cheese
  • 2 tablespoons/30 mL olive oil
  • 2 tablespoons/30 mL fresh basil or oregano, chopped

How to Make It

  1. Preheat grill for medium heat.
  2. Scoop out the seeds from the tomatoes.
  3. Combine the cheeses, and basil in a small bowl. Fill tomatoes with the mixture.
  4. Top each tomato off with olive oil.
  5. Place tomatoes skin side down on a disposable foil pan or triple thick foil sheet.
  6. Cook for 12-15 minutes, until tomatoes begin to soften and cheese has melted.
  7. Remove from grill and serve.
