This Bratwurst recipe has an onion sauerkraut that accompanies it. You can omit the bacon if you wish to lower the fat content.

Ingredients

  • 8 bratwurst links
  • 2 (8-ounce/240 mL) bottles dark beer
  • 3 cups/720 mL sauerkraut
  • 2 cups/475 mL thinly sliced yellow onions
  • 2 cups/475 mL thinly sliced red onions
  • 2 strips bacon, chopped
  • 2 tablespoons/30 mL light brown sugar
  • 1 tablespoon/15 mL minced garlic
  • 1 teaspoon/5 mL black pepper
  • 1 teaspoon/5 mL juniper berries, crushed
  • 1 teaspoon/5 mL salt
  • 8 buns or rolls

Steps to Make It

  1. Puncture each sausage several times with fork.

  2. Simmer the red onions and beer over medium heat. Add bratwurst and simmer for 5 minutes.

  3. Remove the sausages, reserving the liquid. In a large pot, cook bacon until crisp.

  4. Remove from pot and allow to drain on paper towels. Place yellow onions into the ​pot with bacon fat and cook for 5 minutes.

  5. Add garlic and juniper berries. Simmer for 1 minute, then, add the sauerkraut and beer. Add sugar, salt, and pepper, and bring to a boil.

  6. Reduce heat and simmer for about 90 minutes.

  7. Preheat the grill for medium heat.

  8. Cook brats until for 7 minutes, turning occasionally. Remove from heat and set aside.

  9. Place brats in buns or rolls and top off with onion sauerkraut.
