This Bratwurst recipe has an onion sauerkraut that accompanies it. You can omit the bacon if you wish to lower the fat content.
- 8 bratwurst links
- 2 (8-ounce/240 mL) bottles dark beer
- 3 cups/720 mL sauerkraut
- 2 cups/475 mL thinly sliced yellow onions
- 2 cups/475 mL thinly sliced red onions
- 2 strips bacon, chopped
- 2 tablespoons/30 mL light brown sugar
- 1 tablespoon/15 mL minced garlic
- 1 teaspoon/5 mL black pepper
- 1 teaspoon/5 mL juniper berries, crushed
- 1 teaspoon/5 mL salt
- 8 buns or rolls
Puncture each sausage several times with fork.
Simmer the red onions and beer over medium heat. Add bratwurst and simmer for 5 minutes.
Remove the sausages, reserving the liquid. In a large pot, cook bacon until crisp.
Remove from pot and allow to drain on paper towels. Place yellow onions into the pot with bacon fat and cook for 5 minutes.
Add garlic and juniper berries. Simmer for 1 minute, then, add the sauerkraut and beer. Add sugar, salt, and pepper, and bring to a boil.
Reduce heat and simmer for about 90 minutes.
Preheat the grill for medium heat.
Cook brats until for 7 minutes, turning occasionally. Remove from heat and set aside.
Place brats in buns or rolls and top off with onion sauerkraut.
