This grilled flank steak is all about fire. From the chipotle and whiskey glaze to the hot chili powder rub. Add to that, a hot and fast pass over the grill and you have a great steak. I suggest that this one go over charcoal for an authentic fire flavor.

What You'll Need

  • 1 1-2 pound/450-900 g flank steak
  • 1/2 cup/120 mL apricot preserves
  • 1/3 cup/80 mL whiskey
  • 2 tablespoons/30 mL minced chipotle chiles in adobo sauce
  • 2 tablespoons/30 mL brown sugar
  • 1 tablespoon/15 mL hot chili powder
  • 1 teaspoon/5 mL sea salt
  • 1/2 teaspoon/2.5mL black pepper

How to Make It

1. Preheat grill for high temperature cooking.

2. Combine preserves, whiskey, and chiles together in a bowl. Divide in half. Combine brown sugar, chili powder, salt and pepper. Rub over the surface of the flank steak. Place steak on grill for 5 minutes. Flip and brush with half of the glaze and continue grilling for 4 minutes. Flip a third time, brush with more of the 1/2 of the glaze. Continue grilling until done.

3. Remove from grill and let rest for about 5 minutes. Serve with the other 1/2 of the glaze poured over top.

4. Store leftover steak in an air tight container in the refrigerator for 3-4 days after preparations.
