Perhaps pork chops aren't the first thing you think of when it comes to grilling, but as long as you choose the right cut, marinate the chops, and don't overcook them, pork chops can be the star of your next cookout. This recipe features a marinade made of honey, soy sauce, garlic, ginger, and sesame oil, bringing a bit of sweetness along with umami and warm spice; this mixture also creates a caramelized surface when grilled, adding another layer of deliciousness.

When selecting a cut, choose pork chops that are thick and meaty, such as a thick rib chop or center-cut loin chop. These cuts are tender, without much tough muscle. You can use bone-in or boneless pork chops, just be sure to adjust the cooking time accordingly as boneless will take longer to grill.

Make sure to plan ahead for marinating—the pork chops should sit in the refrigerator for one to three hours. If you like, you can split the batch of marinade and use half of it to marinate the meat and pour the rest into a saucepan to simmer while the pork chops are grilling. When you are ready to serve, pour the simmered sauce over the grilled pork chops.

Serve this dish over plain white or brown rice (which is delicious with the marinade-turned sauce), grilled sweet potatoes, or mashed potatoes. Round out the meal with grilled vegetables or a green salad.


  • 4 pork chops (1 1/2 inches thick)
  • For the Marinade:
  • 1/3 cup honey
  • 3 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 2 cloves garlic (minced)
  • 1 teaspoon powdered ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sea salt

Steps to Make It

  1. Gather the ingredients.

  2. Combine the marinade ingredients in a small bowl.

  3. Place the pork chops in a shallow glass dish.

  4. Pour the marinade over the chops, cover, and allow to marinate in the refrigerator for 1 to 3 hours.

  5. Preheat the grill for medium heat. Lightly oil the grill rack.

  6. Remove the chops from the glass dish and discard the marinade.

  7. Place the pork chops on the lightly oiled grill rack and allow them to cook for 20 to 25 minutes, turning once.

  8. Once the internal temperature reaches 145 F, the pork chops are done.

  9. Remove the chops from the heat, and let them rest for 5 minutes.

  10. Serve with your favorite sides and enjoy.
