This is a delicious chicken recipe that is sure to please. The bourbon is subtle yet adds a fantastic flavor to the chicken breasts. Enjoy with your favorite grilled sides.
- 4-6 chicken breast (halves)
- 1 tsp/5 mL sea salt
- 1/2 tsp./2.5 mL black pepper
- For Marinade/Sauce:
- 1 cup/240 mL maple syrup
- 1/4 cup/60mL bourbon
- 2 tbsp./30 mL water
- 2 tbsp./30 mL olive oil
- 1 tbsp./15 mL soy sauce
- 1-2 cloves garlic (minced)
- 1 tsp/5 mL thyme (dried)
- 1 teaspoon/5 mL parsley (dried)
Combine, herbs, bourbon, soy sauce water, maple syrup, and olive oil in large bowl.
Divide mixture in half.
Add chicken to bowl and coat well with half the mixture.
Cover and marinate for two to three hours.
Place remaining mixture in a small saucepan and simmer on low heat for eight to ten minutes, stirring often.
Remove from heat. You may need to reheat before serving.
Preheat grill for medium heat.
Remove chicken from refrigerator and discard marinade.
Place chicken on grill and allow to cook for 20 minutes or until meat reaches an internal temperature of 165 F in the thickest part.
Once cooked, remove from heat and serve with warmed sauce on top.
