Grilled Seafood Po'Boy Sandwich

This is a great grilled sandwich for any occasion. Summer cookouts, family dinners, and the big game come to mind. If you're not a fan of spice, you can omit the jalapeno pepper.


  • 1 pound medium shrimp (peeled and deveined)
  • 1 large catfish fillet
  • 1/2 cup red bell peppers
  • 1/3 cup mayonnaise
  • 1/4 cup lemon juice
  • 1/2 small onion (diced)
  • 2 cloves garlic (minced)
  • 2 tablespoons mustard
  • 2 tablespoons parsley (or cilantro; fresh and chopped)
  • 1 jalapeno pepper (seeds removed)
  • 1 tablespoon olive oil
  • 2 teaspoons Creole Seasoning
  • 4 sub sandwich rolls

Steps to Make It

  1. Gather the ingredients.

  2. Place peeled shrimp in large dish.

  3. Cut catfish into 1 inch strips and add to shrimp. Season with Creole seasoning, cover and allow to sit in refrigerator for 1 hour.

  4. Blend oil and fresh lemon juice together. Pour mixture into seafood bowl, cover, and allow to marinate for an additional 15 to 20 minutes.

  5. While seafood is marinating, cut bell peppers and jalapenos into strips. Mix peppers with mayonnaise mustard, parsley, and minced garlic.

  6. Preheat grill for medium-high heat.

  7. Remove seafood from refrigerator and discard marinade. Place seafood on a well oiled grill grate or oiled grill basket.

  8. Cook fish for 6 to 7 minutes and shrimp for 3 to 4 minutes, turning once.

  9. Remove from grill and arrange sandwiches with pepper mayonnaise, garnish of choice, and seafood.
